Hi Ionut,
The UV-5RC is electronically no different than any other member of the UV-5R family of radios. The C merely indicates a particular case style that the electronics were packaged in.
Your issue is the CHIRP "Memory range:" setting. It is up near the top left of the spreadsheet editor menu. The Memory Range setting allows you to narrow the range of channels that CHIRP displays. That way if you are programming channels 75 through 85, you plug those numbers in and you won't have to scroll back down to 75 every time you've made a change after uploading the changes to your radio for testing. The other channels are still there. You've just zoomed in to the range of channels that you are interested in.
So in your case, you need to set Memory range: to be 0 - 127 so CHIRP will display full compliment of 128 channel memories.

Hi Jim,
The problem is actually, that when I double click the frequency on a free channel, I get the error "Error setting memoryFrequency 0.000000 is out of supported range". This seems to be related to the GUI toolkit rather than the baofeng radio or the rest of the application.

Why would want to intentionally double click the Frequency cell of a vacant channel? That to me changes it from a vacant channel to an occupied channel with a frequency of 0.000000 MHz which is "out of supported range". That sounds like a valid error to me. Sure you have to click the cell twice to edit it. Just allow a little time between clicks.
